Spanish Rice - an old Minute Rice recipe
Melt 4 tbsp butter in large skillet. Add 1/2 tsp. paprika.
Add 1/3 cup finely chopped green pepper, 1/2 cup chopped onion, and 1/3 cup finely chopped celery
and cook slowly until tender.
Then add 1/2 pound hamburger and cook until slightly browned, stirring often.
Add 1 1/2 cups Minute Rice, 1 1/2 tsp salt, 1/8 tsp black pepper, 1/4 tsp curry powder and 1 large can (1 pound 12 oz) tomatoes.
Cook gently uncovered about 30 minutes, stirring once in awhile.
Makes 4-6 servings.
Notes:
I like my celery coarsely chopped. I add much more curry powder.
This recipe was written down by my mother, Kathleen, who wrote: "This
recipe was on the box of Minute Rice when it first came on the
market at least 25 years ago (much more than that now!) They then
stopped printing it so this recipe is truly a collector's item."
I did a recipe search on the Minute Rice website in 2013 and could not find it there. So maybe my mother was right!
