Kumquat Refrigerator Pie

And if you want to try something a little different, here's a recipe for Kumquat Pie - kumquats are in season usually in January up here: they can be hard to find. Just remove the stubby stem and grind up the whole things. And if you eat them whole as a snack, the same thing! We always got kumquats for Christmas growing up.
 

1 baked pie crust 9” (or pre-made graham cracker crust)

1 regular Cool Whip (8 oz)

2/3 cup pureed kumquats (take off any little stems!)

1 can condensed milk

½ cup lemon juice

(mint leaves for garnish)

(halved kumquats to decorate top of pie)

 
Beat condensed milk and Cool Whip. Add lemon juice and beat until thickened. Stir in pureed kumquats. Pour in pie shell and chill in fridge for several hours. Garnish with mint leaves and half slice kumquats.


I just use a blender to puree them, might have to push them down to the blades, and you are shooting for a coarse mash, not a real puree, as all the little bits give the pie some bite! I probably use more kumquats than they call for. And usually there is too much filling which makes for some great snacking!
